Depends on where the V arm and the rest of the jig is located. I went from 6" to 8" things changed a little probably due to the accuracy of how I mounted the hardware. The actual bevel of the tool changes very little. Same thing happens when you replace a worn wheel with a new wheel.

The Oliver does not use a V arm it uses a bar that the angle is adjustable across the wheels. I will set the angle properly with my Wixley angle Gauge. Any suggestions?

The Oliver has 6" grinding wheels, My Delta wolverine has 8" does the angles change?

The big difference is the increased concavity of the bevel on smaller wheels. A micro bevel and or honing corrects for the concave bevel.
The concave bevel is a tiny bit harder to control since the cut wants to follow the bevel. A tool with a concave bevel wants to cut deeper all by itself. I hand sharpen my spindle tools so they have a flat or convex bevel.
Bowl gouges I use straight from the grinder.

The angles are not dependent on wheel size -bevel angles depend on the supporting geometry of the mechanisms - platforms, vee pockets etc.
