It's discussed here, http://nautarch.tamu.edu/class/anth605/File6.htm and the reasons are the same as why you get lumps in your sugar bowl. Haven't tried caramelizing with external sugar, but heating up a chunk of sugar-laden maple will give a mellow brown.
Anyone played this game by adding a hygroscopic bulking agent less than full greasy PEG?
