When you click the quote button, your new message starts out with the entire quoted message in your editing box. Simply delete whatever you do not want shown (or quoted) and start typing your new message below it.
Before you submit though, make sure that the quote you want included, has the proper syntax to display correctly. You can preview it and it will show up as a quote, or you can check the syntax in the typed message

Any quote must start with [ (left bracket) then the work QUOTE= and the user name quoted and then a right bracket ]
To end the quote, use a [ (left bracket) a / (forward slash) the word QUOTE and then close with a right bracket ]

It's a computer, very literal, and any derivation to the syntax and it doesn't show up correctly.

It looks a bit intimidating at first, but soon you will be doing multiple quotes in your messages!
