A couple of years ago I posted an article in the Tutorials and Tips Forum on how to turn spheres easily without a jig. I have just added a sequel that extends the technique to turning oblate or prolate spheroids, and (although I forgot to mention it) ovoids.
 
... and, I presume ellipsoids as well.

I believe that spheroids are a subset of ellipsoids, specifically those that are circular about one axis. Maybe with an elliptical chuck you could do arbitrary ellipsoids. My mind boggles at the thought of working out the math for that. :(
