Treadle polishing lathe - Advice sought

I have an antique treadle polishing lathe, sometimes called a dental lathe, and would like to modify it to use for turning demonstrations. It has limitations, of course, but seems a good candidate for simple low speed turning projects.

I would like to hear what your advice is on how I could modify/replace the lathe head and add-on to it to make a good demonstration lathe out of it.

Overall I would like to keep the modifications simple, and I am considering building a custom head unit to replace the existing polishing/grinding head unit.
