I like the idea of the Ruth niles insert but I like the one that is open on both ends
The problem is it’s not stainless
Does anyone have an idea where to get a stainless insert that is open on both ends
That would be the same style

SS is difficult to find. If you must have SS, search for “rivet nut”. I have used them in wood with success (epoxy to hold them in). You may not like the design.
