I have no scientific knowledge about what I stated I just know by use. A 1000 grit CBN wheel will get the gouge very sharp but I know by use that it dulls faster and the type of wood can add to that. For me the best all around CBN is the 180 as it gives me the longest lasting cutting edge. As far as an 8° edge on a blade I'll bet that my USMC KA-BAR survival knife is very near that as I use it for hunting and it will unzip a deer in seconds.
