I am interested in turning some “southern biscuit cutters and the requested wood is pistachio. Minimum 3.5” diameter, 2” height with a handle.
My first question is how stable is pistachio
Second question where is a good source cog seasoned turning wood.

The limited pistachio I have seen has cracked like mad as it dried. Common with fruit woods, less typical of nut woods. It's really hard/dense and gorgeous. Hopefully somebody from the southwest with more experience will chime in.

I once had a project for which I wanted to use peach wood, which is not generally carried by suppliers. I contacted a half dozen peach growers in an area where I knew someone and one of them was just in the process of cutting down trees past their prime and I got a trunk. That might be how you have to proceed, too.
