I do something similar to true bowls on a vacuum chuck if there is not a true center in the wood.
I generally use a bowl gouge as a lever handle up, flute edges against the tool rest and push gently with the round part with the vacuum set low enough to hold the bowl and still allow it to pushed around. One hand levering the bowl the other hand steadying the bowl just I case the vaccum let's go.
