Why not treat it just like cherry? Wouldn't it be pretty similar?

I don't know if it was damson, but this plum bowl was finished in paste wax:

It behaves a lot like cherry, so satin or semi-gloss polyurethane should work well too, as Ed suggests.
If the price was right (e.g. free), and you have more of it, do some experiments - no better way to know.

Yeah, Me too, also.
Same family as cherry, so would benefit from a penetrating oil finish like Waterlox to pop the grain.
