Doctors Walnut Oil/Carnauba Wax/Shellac Finish

Good point Dave. I tell my customers to use a light coat of mineral oil to maintain their pieces they intend to use for serving.
I use Mahoney's walnut oil, which does cure. I tell my customers they can use walnut oil from the grocery if they want to "refresh" a bowl.
I don't ever do anything to my personal bowls and spoons, and they're fine. They don't look like they originally did, but have their own patina from use.
I figure if someone is going to "maintain" theirs, they'll probably be redoing it every few months and it really won't matter if it cures or not in between time. So grocery oil is ok.
